Won Ton Soup

Ingredients:

1/2 lb Ground Pork
1 t Oil
1 t Red Wine Vinegar
2 t Soy Sauce
2 T Water Chestnut, chopped
1 Egg
1/3 t Sugar
Dash Pepper
1/4 C Green Onion
Won Ton Wrapers

Directions:

Cook pork until browned. Combine all ingredients except green onion. Place 1/2 t mixture on won ton wrapers and seal with hot water.

Boil won tons until they float. Remove and drain. Make homemade chicken stock or use broth or cubes. Add won tons and garnish with green onions.


Won Ton Soup II

Ingredients:

1/2 lb Ground Pork
2 Green Onions
4 whole Mushrooms, chopped
3 Water Chestnuts, diced
1 t Soy Sauce

Directions:

Cook pork until browned. combine with other ingredients and add soy sauce. Place 1/2 t mixture on won ton wrapers and seal.

Boil until won tons float. Make chicken stock; add won tons and garnish with green onions.


Apple, Potato, and Cheddar Soup

Ingredients:

2 T Oil
3 Granny Smith Apples
1 Potato
1 Stalk Celery
1/4 C Onion, chopped
1/8 t Thyme
1/4 C White Wine
5 C Chicken Stock
4 C Mild Grated Cheddar
1/2 C Heavy Cream
1/8 t Nutmeg

Directions:

Heat oil in a large saucepot; add three chopped apples, potato, celery, onion, and thyme. Saute 10 minutes.

Stir in wine and simmer 2 minutes; add stock and simmer 45 minutes. Puree soup mixture.

Over low heat, stir in cheese, cream, nutmeg, and salt and pepper to taste. Cook until just heated, do not boil. Garnish with croutons and diced apple.


Cindi’s Bacon Corn Chowder

Ingredients:

1/2 lb Bacon
1/2 Medium Onion
1 Celery Stalk
2 Cans Cream of Potato Soup
2 Cans Cream Style Corn
2 1/2 C Milk
1 t Thyme
1 T Chicken Soup Base

Directions:

Cut bacon into pieces and cook; drain. Add onion and celery and cook until onion is transparent. Add all other ingredients and bring to a boil. Reduce heat and serve.


Dad’s Chilli

Ingredients:

2 lbs Hamburger
1 1/2 Medium Onions, chopped
1/2 t Paprika
1/3 C Flour
1/2 t Cumin
1 1/2 t Brown Sugar
1 1/2 T Chili Powder
1 C Celery
28 oz Tomato Juice
1 C Water

Directions:

Combine hamburger, one onion, garlic and paprika. Cook until done; drain.

Combine celery and 1/2 an onion and cook until celery is tender. Combine all ingredients together and bring to a boil. Cook until desired consistency is reached, approx 20 minutes.


Lentil Soup

Ingredients:

2 C Lentils
1 1/2L Water
6 Cubes Chicken Bullion
1 Can Stewed Tomatoes
3 Carrots, sliced
1 Bay Leaf
1 Onion, chopped
1 lb Hamburger
S & P to taste

Directions:

Cook hamburger; drain. Combine all other ingredients in a 4L pot. Bring to boil and cook until tender. Add hamburger and heat through.


Taco Soup

Ingredients:

1 lb Ground Beef
1/2 Medium Onion
1 can Niblet Corn
1 pkg Taco Seasoning
1 can Tomato Sauce
1 can Chilli
1 C Water

Directions:

Cook ground beef and drain. Add onion and cook until transparent. Add chili and corn, undrained. Add tomato sauce and mix well. Combine taco seasoning with water and add. Bring to a boil and serve with sour cream, cheddar cheese, and taco chips.
